Vanilla Cupcakes With Buttercream Frosting

Do you have a blog schedule? I am trying to develop one. According to it, I had another post planned for today.

But then, life happens. Yesterday happened to be the birthday of a friend’s sweet little baby boy. So I made cupcakes. And I am posting the recipe now. Because it turned out so sweet. Just like the baby!

I followed Joy Of Baking’s recipe for the vanilla cupcakes and frosting, with little adjustments, of course. Here is my version. I had no fresh lemon, so I substituted the zest for some lemon juice concentrate. Couldn’t tell the difference. Turned out so good!

You will need:

For the cupcakes:

  • All purpose flour – 1 1/2 cups
  • Baking powder – 1 1/2 tsp
  • Salt – 1/4 tsp
  • Butter – 1/2 cup, at room temperature
  • White granulated sugar – 2/3 cup
  • Eggs – 3 large ones
  • Vanilla extract – 1 tsp
  • Lemon juice – 1 tbsp (or zest of 1 lemon)
  • Milk – 1/4 cup (I used whole milk or the full fat version)

For the buttercream frosting:

  • Butter – 1/2 cup, at room temperature
  • Powdered or confectioner’s sugar – 2 cups
  • Vanilla extract – 1 tsp
  • Milk – 1/4 cup, or as needed
  • Blue or other food coloring – a few drops (optional)

How to:

  • Pre-heat the oven to 350 deg.F and line a 12-cupcake pan with paper liners.
  • Sift dry ingredients together and keep aside.
  • Beat the butter and sugar till light and fluffy.
  • Add the eggs one by one, beating well after each egg.
  • Add the vanilla extract and lemon juice (or zest). Beat well.
  • Add the sifted dry ingredients slowly to the butter mixture, alternating with milk, and beat till incorporated.
  • Bake for about 15-20 minutes. This makes exactly 12 good-sized cupcakes.
  • Let the cupcakes cool on a wire rack completely.

Buttercream Frosting:

  • For the frosting, first beat the butter well.
  • Add the vanilla extract. Add the sugar slowly and keep beating on a low setting.
  • Add the milk, a tablespoon at a time, till desired consistency is reached.
  • Add desired food coloring, if using. I used blue gel food color. It adds color without any additional moisture.
  • Beat well on high speed for 3-4 minutes till light and fluffy. (Do not skip this step. It makes the frosting really fluffy.)
  • Frost the completely cooled cupcakes. Decorate and enjoy!

As you can see, my frosting is far from perfect. I lack the patience and a steady hand. Need to work on it. Baby steps folks, baby steps! I am getting there!!
