Stay cool and nourished this summer with this icy, creamy pineapple coconut cooler, aka the virgin pina colada!
I know it’s just getting started but summer is most definitely on its way. The days are warmer, especially around noon and early evening. All I can think of is how lovely a tall, icy cool drink would be!
The guys of the house are “juice-fiends” and I do what I can to keep them from buying any junk from the store. So I make them different cold beverages especially in spring and summer. A different fruit, different color each time. There’s so many combos and flavors to try!
Of late, I have started adding more pineapple in our diet. Pineapples are super rich in vitamins, minerals, beta carotene, fiber, and bromelain, a highly beneficial anti-inflammatory enzyme.
Even though I know pineapples are good for us, I am not a super big fan of pineapple as such, but I like it in some recipes like beverages, jams and some desserts. The kiddo is the same, but guess what he discovered lately? A pina colada flavored yogurt smoothie! That was all the motivation I needed to try making my own.
Pina colada is a cocktail made with pineapple, coconut milk and rum. This popular drink was the inspiration behind my pineapple coconut smoothie/drink.
Coconut and pineapple are just meant to be together. One sip, and you’re transported to the tropics. This pineapple coconut cooler is an easy, delicious way to stay cool when the temps soar this summer. Be sure to use fresh pineapple in this recipe for best results.
This is a super easy drink recipe with pineapple. All you need to is blend together fresh pineapple, coconut milk (fresh or canned) and ice cubes. I like to add a hint of lemon zest and a touch of honey as well. The lemon brightens the drink and the honey adds a subtle sweetness. Use it if you think your pina colada mocktail needs additional sweetness. The fiber may settle at the bottom when this drink sits for a while, so you can either strain it or simply remember to stir well before serving.
This pineapple beverage is a great energizer and refresher. It’s great to serve at parties as well. Imagine how lovely this virgin pina colada beverage will go with barbecued meats and such.
- Pineapple chunks - 2 cups, fresh
- Coconut milk - 1 can (1¼ cups)
- Lemon zest - 1 tsp, optional
- Honey - 1-2 tbsp, optional
- Ice cubes - 10-12
- Blend pineapple, coconut milk, lemon zest and honey till smooth. Add enough ice cubes to make the beverage to a consistency of your liking. Serve chilled.
