Eating right and eating at the right times are so important for a healthy lifestyle. But that can be easier said than done. It might be super tempting to miss breakfast or to eat junk throughout the day. Sometimes we are busy or we simply dread the hassle of putting a wholesome meal together. I have been guilty of all those things at some point or the other.

Sometimes I get sucked into that glorious thing called the internet and social media. One thing leads to another, and I have neither accomplished any work nor remembered to have a proper meal. Now instead of reaching out for a bag of chips or that cold bowl of leftover takeout dinner, wouldn’t it be wonderful to have a healthy and delicious snack option?

Recently, I discovered Sejoyia Coco-Roons, the original superfood cookie. These are gluten-free, organic, vegan, paleo-friendly, non-GMO, kosher cookies (yes, cookies!) that I found at my local Walmart’s gluten-free set. These cookies are a healthy snack option any time of day.

My favorite flavors are the brownie and lemon pie. It’s hard to pick a favorite really and I usually go with whatever I’m in the mood for. Both of them satiate my midday cravings and make me incredibly happy!

It is a light and refreshing yogurt parfait that is also wholesome and filling. Made with Greek yogurt, fresh berries, granola and Coco-Roons, these parfait bowls can be a delicious breakfast, snack or even dessert!

I always buy plain yogurt and simply sweeten it with a touch of honey if needed. The berries, granola and Coco-Roons add just the right touch of sweetness to satisfy my sweet tooth.

You will need:
  • Greek yogurt - 1 cup
  • Strawberries - 1-2, sliced
  • Blueberries - 8-10
  • Granola - ¼ cup
  • Honey - 1 tsp
  • Sejoyia Coco-Roons cookies - 2
  • Toasted coconut flakes - for garnish, optional
  • Fresh mint leaves - for garnish, optional
How to:
  1. Layer yogurt, berries and granola in a glass or bowl. Drizzle honey on top.
  2. Add coco-roon cookie slices on top. Garnish with mint leaves and toasted coconut if desired. Enjoy!
Notes:
1. Replace berries with other seasonal fruit of choice.
