Palak Puri With Tomato Chutney

Perfectly puffed palak puri (spinach puffed breads) served with a quick spicy-sweet tomato chutney makes for an easy and wholesome Indian meal.

I get so excited when puri is on the menu. When I used to live in a hostel during my college and early career days, every time I visited home, I had one request for breakfast – delicious puffy puris! My dear mom obliged every time, and she makes the best puris; perfectly puffed, crisp on the outside and soft enough to tear and with just two fingers.

Thankfully, my son shares my enthusiasm for puris. While I was trying to find ways to make it even more interesting, I decided to make puris in his favorite color. No prizes for guessing what that is!

And, how did I get that delicious green? Spinach! Popeye’s superfood and a treasure-trove of flavor and goodness, spinach adds a lovely natural green color to the dough. I blanched a bunch of fresh greens, pureed them and made the puri dough with atta or whole-wheat flour.

I used my new Rotito Rolling Board set from Gitadini to roll and shape the spinach puri dough. Fried them all up and also made a quick stove-top tomato chutney to go with it. I cooked down tomatoes with onions, ginger, garlic, spices and a bit of sweetener for a delicious spicy-sweet kick. Even my picky-eater son who hates onions absolutely loved the red chutney. He devoured the palak puri and tomato chutney like there was no tomorrow and I was one happy mom (pat on back).
