Orange Crinkle Cookies

Deliciously chewy crinkle cookies bursting with a fresh orange flavor, you simply cannot stop at one!
You will need:
  • All-purpose flour - 2 cups
  • Baking powder - 2 tsp
  • Salt - ½ tsp
  • Unsalted butter - 10 Tbsp, softened
  • Sugar - 1 cup + 4 tbsp (for coating the formed cookie dough)
  • Egg - 1, large
  • Egg yolk - 1, large
  • Orange zest - from one large orange
  • Orange juice - 2 tbsp, freshly squeezed
  • Orange extract - 1 tsp
  • Vanilla extract - ½ tsp
  • Orange gel food color - a few drops, optional (or use a combo of red and yellow colors)
  • Powdered sugar - ½ cup, to coat the formed cookie dough
How to:
  1. Preheat oven to 350 deg.F. Line a couple of large baking sheets with parchment paper and set aside.
  2. In a medium mixing bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a large mixing bowl, cream together butter and 1 cup of sugar until pale and fluffy. Add the egg and egg yolk and mix well.
  4. Add orange zest, orange juice, orange extract, vanilla extract and mix until combined. Add a few drops of food color if you want your cookies to be orange in color. Make sure to thoroughly blend in the color.
  5. Slowly add in dry ingredients and mix slowly just until combined. At this point, cover the mixing bowl with cling wrap and refrigerate for at least half an hour. This will make handling the dough much easier while forming the cookies.
  6. Take ¼ cup granulated sugar and powdered sugar in two separate shallow bowls. Scoop out tablespoonfuls of the dough and roll into neat balls in the palm of your hand. Roll the dough balls first lightly in granulated sugar and then in powdered sugar. Place on the baking sheet, 2" apart (cookies will spread when baking).
  7. Bake in preheated oven for 10-14 minutes or till edges are lightly golden. Remove from oven and cool on baking sheet for 5 minutes, then remove cookies with a flat spatula on to a wire rack to cool completely. Store cookies in an airtight container.
Notes:
1. You will get the orange color only if you use food coloring. Using gel food color will ensure that you no additional liquid is introduced in the batter. If you do not have orange color, use red and yellow together to get orange.
2. You can use the same recipe to make lemon or lime cookies. Use lemon or lime juice, zest and extract in place of orange and add yellow food color or a pinch of turmeric for color.
3. Sometimes, the powdered sugar coating will simply dissolve and bake right into the cookies. Rolling the dough in granulated sugar first helps keep the powdered sugar from disappearing into the cookies completely.
4. The prep time given here doesn't reflect dough chilling time, so plan your time accordingly.
