Mango-Berry Layered Lassi Popsicles

Fruity, creamy and delicious, these colorful layered lassi popsicles are made by layering mango lassi and berry lassi. With a hint of cardamom and mint, these yogurt pops are the best summer treats!
You will need:
For the mango lassi layer
  • Mango - 2 cups, chopped (1 large mango or 2 small ones)
  • Yogurt - 1 cup
  • Milk - ½ cup
  • Sugar - 3-4 tbsp (depending on the sweetness of mangoes)
  • Cardamom powder - ½ tsp
  • Mint leaves - 3-4, optional
For the berry lassi layer
  • Berries - 2 cups, chopped (I used strawberries and blackberries)
  • Yogurt - 1 cup
  • Milk - ½ cup
  • Sugar - 3-4 tbsp (depending on the sweetness of berries)
  • Cardamom powder - ½ tsp
  • Mint leaves - 3-4, optional
How to:
  1. Make the mango lassi layer first. Blend all the ingredients together till smooth and creamy. Taste and adjust sweetness. Remove to a bowl and set aside.
  2. Rinse out the blender and blend the berries to make a smooth puree. Strain this to remove seeds. Return to blender along with the other ingredients and blend till smooth and creamy. Taste and adjust sweetness. Remove to a bowl and set aside.
  3. Fill popsicle molds (or small glasses) halfway with either the mango or berry lassi.
  4. Cover and freeze for 20-30 minutes.
  5. Remove from freezer and top up with the next lassi layer. Stick in popsicle sticks, cover and freeze 4-6 hours or overnight.
  6. To remove lassi popsicles easily from molds, lightly run water on the outside of the molds.
Notes:
1. Use your favorite fruits to make layered lassi popsicles. Some other fruits that will make for colorful pops are peaches, plums, cherries, raspberries, blueberries, kiwi, watermelon, pineapple, etc.
2. The prep time shown here does not reflect popsicle freeze times.
