Peanut Butter Stuffed Banana Ebelskivers With Strawberry Sauce

Ebelskivers or Æbleskivers are little pancake puffs cooked in a special ebelskiver pan. This version is made with whole wheat flour and bananas and stuffed with peanut butter for a creamy center. Served with strawberry sauce, this makes for a delightful breakfast or quick snack.
You will need:
For Peanut Butter Stuffed Banana Ebelskivers,
  • Whole wheat flour - ¾ cup
  • Rice flour - ¼ cup
  • Baking soda - ½ tsp
  • Baking powder - ½ tsp
  • Salt - ½ tsp
  • Buttermilk - 1 cup (I use half yogurt and half milk)
  • Egg - 1, large
  • Vanilla extract - ½ tsp
  • Bananas - 2 large, mashed (very ripe)
  • Creamy peanut butter - 3-4 tbsp
  • Butter - 1-2 tbsp, melted (for brushing the pan)
  • Powdered sugar - for dusting
For Strawberry Sauce,
  • Strawberries - 1 cup, hulled and chopped
  • Sugar - ¼ cup
  • Lemon juice - 2 tsp
  • Salt - a small pinch
How to:
  1. Peanut Butter Stuffed Banana Ebelskivers: Whisk the dry ingredients together in a mixing bowl.
  2. In another bowl, whisk together the buttermilk, egg, banana and vanilla extract.
  3. Tip the wet ingredients into the dry ingredients and whisk well to combine. Do not overmix, a few lumps are okay.
  4. Heat the ebelskiver pan on medium heat. Dab a bit of butter in the indentations of the pan. Pour batter into each indentations till the halfway mark. Place a dot of peanut butter in the center, around ½ tsp. Cover with more batter.
  5. Cook till bottom is golden brown, around 3-4 minutes. Flip them over with a skewer or small spoon and cook the other side for a couple more minutes. Reduce heat slightly if the ebelskivers are browning too rapidly.
  6. Remove ebelskivers from pan to a platter and keep warm. Dust with powdered sugar and serve with fresh strawberry sauce. Recipe follows.
  7. Strawberry Sauce: Add all ingredients to a saucepan and cook on medium heat till berries are soft. Mash them with the back of a spoon and cook till the sauce comes together. Remove to a jar and set aside till needed.
Notes:
1. If you do not have rice flour, replace it with whole wheat flour or all-purpose flour.
2. Make sure to cook the ebelskivers on medium or medium-low heat so that the outsides do not brown too rapidly without the insides cooking properly.
3. Since the ebelskivers come with multiple indentations (anywhere between 7-12), the cooking process goes by pretty quickly and smoothly.
