Eggless Strawberry Mousse

Light as air and made with real strawberries, this eggless strawberry mousse is an easy no-cook summer dessert!
You will need:
  • Fresh strawberries - 6 oz, hulled
  • Heavy cream - 8 oz
  • Powdered sugar - 4 tbsp, divided (see Notes)
  • Graham crackers - 2, crushed (optional)
  • Fresh mint leaves - a few, to garnish (optional)
How to:
  1. Puree the strawberries along with 2 tbsp powdered sugar till smooth. You can strain this puree or leave it as such.
  2. In a cold mixing bowl, whip the cold heavy cream and the rest of the sugar till soft peaks form.
  3. Stir in the strawberry puree and whisk to combine.
  4. Pour into dessert glasses or bowls, cover with cling wrap and refrigerate till set, 2-4 hours.
  5. Just before serving, sprinkle some crushed crackers on top and garnish with fresh mint leaves or fresh strawberry pieces. Enjoy cold and keep leftovers refrigerated.
Notes:
1. Please note that the prep time does not reflect the mousse setting or chilling time. So please plan accordingly.
2. You can use granulated sugar instead of powdered sugar. But I have used commercial powdered sugar since it dissolves quickly and also doesn't thin out the mousse like regular sugar would.
3. You can also try this with other berries like raspberries, blueberries and blackberries. Strain the puree to remove seeds and skins.
4. You can also quickly make this dessert in a high-speed blender. Add all ingredients to the jar and pulse just a few times till thickened. Any longer and the heavy cream will turn to butter!
