One-Bowl Strawberry Cupcakes

A batch of pretty-in-pink, one-bowl strawberry cupcakes with a light whipped frosting is made in under 30 minutes from start to finish. Perfect for when the cupcake cravings strike or as a surprise for a loved one.
You will need:
  • Sugar - ½ cup
  • Eggs - 2, large
  • Oil (vegetable or canola) - ⅓ cup
  • Milk - ¼ cup
  • Strawberry puree - ¼ cup
  • Vanilla extract - ½ tsp
  • Red gel food color - 2 drops
  • All-purpose flour - 1½ cups, sifted
  • Baking powder - 1 tsp
  • Salt - ¼ tsp
  • Whipped cream - 1 cup
  • Sprinkles - as needed
How to:
  1. Pre-heat the oven to 350 deg.F. Line a muffin pan with paper liners and set aside. (This recipe makes 12 small or 6 large cupcakes depending on your pan size.)
  2. Beat together the sugar, eggs and oil in a large mixing bowl until smooth.
  3. Add milk, strawberry puree, vanilla extract and food color and beat well to combine.
  4. With a large sifter placed over the bowl, add the flour, baking powder and salt into the wet ingredients. Mix until just combined.
  5. Divide batter among liners. Bake for 20 minutes or until the cupcakes pass the toothpick test.
  6. Remove the pan from oven and cool the cupcakes completely on a wire rack.
  7. Frost the cooled cupcakes liberally with whipped cream. You can tint the frosting pink or any other color that you like. Add sprinkles and enjoy. Store leftovers in the refrigerator.
