Enjoy a delicious summer breakfast, sweet dinner or light dessert with these thick and fluffy waffle fruit tarts topped with Greek yogurt, fruits, nuts and a touch of lime-honey drizzle.
You will need:
  • Kellogg's® Eggo Thick & Fluffy Original waffles - 4, frozen
  • Greek yogurt - 1 cup
  • Honey - 3 tbsp
  • Lime juice - 2 tsp
  • Mixed fruits - 1 cup (see Notes)
  • Almonds - 12
  • Fresh mint leaves - a few, for garnish
How to:
  1. Prepare Kellogg's® Eggo Thick & Fluffy Original waffles as per package instructions, either in a toaster or in the oven until hot and crisp.
  2. Meanwhile, whisk together Greek yogurt and 1½ tbsp honey in a small bowl. Set aside.
  3. In another small bowl, whisk together the rest of the honey and lime juice. Set aside.
  4. Chop and prep the fruits that you intend to use.
  5. Spread ¼ cup sweetened yogurt over a crisp waffle. Top with an assortment of fruits and some almonds. Drizzle the lime-honey over it and garnish with a fresh mint leaf. Serve immediately.
Notes:
1. The recipe can be replicated with any variety of Kellogg's® Eggo Thick & Fluffy waffles.
2. I used an assortment of fruits like strawberries, kiwi, cherries and mangoes. Some other examples are blueberries, raspberries, peaches, apricots, apples, orange segments, grapes, etc.
