Brazilian Lemonade With Coconut Milk

A creamy, dreamy beverage made with limes and coconut milk, this cool drink will transport you to the tropics!
You will need:
  • Sugar - ½ cup
  • Water - ½ cup
  • Limes - 3, large
  • Coconut milk - 1 can (chilled)
  • Ice cubes - 8-10
  • Mint leaves - to garnish, optional
How to:
  1. Make the sugar syrup first. In a saucepan, take sugar and water and heat till the sugar dissolves. Cool and use.
  2. Quarter the limes and throw them in the blender with a little water, around ¼ cup. Blend coarsely and strain the pulp using a fine mesh strainer into a pitcher. (If you are picky about the ever-so-slight bitterness from the peels, simply juice the limes and proceed directly to the next step.)
  3. Rinse the blender. Combine the lime juice, sugar syrup, coconut milk and ice cubes and blend well.
  4. Taste and add more sugar if you like a sugary drink (I didn't add any). Garnish with mint leaves and serve immediately.
