Peanut Butter Banana Bread

Banana bread – that ingenious way to use up overly ripe bananas! How I love banana bread and banana coffee cakes!  What about the peanut butter version? It has to be good!

This recipe uses peanut butter (chunky or creamy) and brown sugar to create a decadent, moist version of the traditional banana bread.

You will need: (* – Refer notes)

  • All purpose flour – 2 cups
  • Baking soda – 3/4 tsp
  • Salt – 1/2 tsp
  • Ripe Bananas – 2 large, mashed (to make up about 1 cup)
  • Peanut butter* – 1/2 cup
  • Sugar – 1/2 cup
  • Brown sugar – 1/2 cup, tightly packed
  • Buttermilk – 1/2 cup
  • Oil** – 1/4 cup
  • Eggs – 2
  • Vanilla extract – 2 tsp
  • Cashew nuts or peanuts – roasted and chopped roughly, a small handful

For the glaze/spread:

  • Peanut butter – 3-4 tbsp
  • Powdered sugar – 1/3 cup
  • Milk – As required

How to:

  • Pre-heat the oven to 350 deg.F and grease a 9×5 bread pan.
  • Sift the dry ingredients together and keep aside.
  • In a large mixing bowl, cream the sugars and peanut butter.
  • Add the eggs and beat well.
  • Add the oil, vanilla extract, buttermilk and bananas. Mix till combined.
  • Add the dry ingredients to the wet ones and mix till just combined. Do not over-mix.
  • Pour into the bread pan and smooth the top. The batter should be thicker than a regular cake batter.
  • Sprinkle the chopped nuts on top of the batter.

  • Bake for about 1 hour. Check the bread at about 40-45 minutes. If the top seems to be browning rapidly, tent the pan with aluminium foil and bake till the center is done.
  • When the bread is baking, make the peanut butter spread. Heat the peanut butter in a saucepan. Add the powdered sugar. Loosen with milk, a tablespoon at a time, till desired consistency is reached.***
  • Cool the bread on a wire rack completely and spread the glaze on top or on individual slices while serving.

Notes:

*I used chunky peanut butter, because it adds more texture.

** You can use regular vegetable oil. I used coconut oil instead. I don’t know if it was that, but my bread was really good!

*** I made the glaze with a strong peanut butter flavor and the consistency of a spread. 

This banana bread has a different flavor with the peanut butter and the texture is less crumbly than regular banana bread. I have seen many recipes with chocolate chips added to the mix. That is gotta be good!

This makes a great breakfast too, along with some coffee or orange juice!

    I don’t think I have ever heard of peanut butter banana bread! I’m sure it is delicious. I love peanut butter in almost everything, why not this? What a great idea!     Ohhhh…I LOVE your loaf pan!!! My sister in law has one like that…I’ve only ever seen the regular size ones in the store. Banana bread also looks yummy! Peanut butter is a great addition!

      I got this loaf pan at Ross. Unfortunately, there are no markings on it, so I have no clue what company it is. I bought it solely because of the bright green color!
