Have you ever wondered how the curries in restaurants are so creamy and rich? The answer, my friend, lies in a whir of the blender. The bhuna or mixture of onions, ginger, garlic and spices fried in oil, is blended to make a smooth paste, which gives the curry its creaminess.
This egg curry is a simple dish that goes well with a variety of rice dishes and Indian flat bread like chapathis and naan, as well.
You will need:
- Oil – 3 tbsp
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1/4 tsp
- Curry leaves – a few sprigs
- Onion – 1 large, chopped
- Tomatoes – 2, chopped
- Ginger and garlic, crushed or ground to a paste – 1 tsp
- Turmeric powder – 1/4 tsp
- Red chili powder – 1 1/2 tsp
- Coriander powder – 1 tsp
- Garam masala powder – 1/2 tsp
- Green peas – a handful (optional)
- Heavy cream – 2 tbsp + 1 tsp (for drizzling on top)
- Eggs – 4, hard-boiled
- Cilantro leaves – a few, for garnish
How to:
- Heat oil in a pan. Add the mustard and cumin seeds and curry leaves.
- When the mustard seeds start sputtering, add the onions and fry till golden.
- Add the ginger and garlic paste and saute well till the raw smell is gone.
- Add the tomatoes and cook till tomatoes are soft.
- Add the masala powders and saute for a couple of minutes.
- Cool the mixture and blend well with a little water. Transfer back to the pan and add a cup of water.
- Add the green peas now. Cover and cook till done.
- Finally, add 2 tbsp cream and simmer till desired consistency is reached.
- Add the halved boiled eggs to the curry and garnish with cilantro leaves. (I always run out of cilantro when I need them the most!) Drizzle a teaspoon of heavy cream on top, restaurant style!!
- Serve hot with rice dishes like vegetable pulao, coconut rice or Indian bread like chapathis or naan, and a side of fresh raita.
