Refreshing Cantaloupe Honey Granita

June 21, 2013 by Anjana @ At The Corner Of Happy And Harried 39 Comments

Cantaloupe Honey Granita with Mint Garnish

Little Boy loved cantaloupe or musk melon as a baby. Nowadays, he turns his nose up at this humble fruit from the melon family.

I love cantaloupe. But a single person can only eat so much cantaloupe, as I pondered what to do with the leftover. I saw a water melon granita recipe on Pinterest and decided to try that with cantaloupe. Granita is a semi-frozen Italian dessert made from sugar, water and various flavorings.

It is better to try it with a slightly over-ripe fruit. You will know it when the guys of the house start to scrunch their noses when you offer a slice.

You will need:

  • Cantaloupe – 1 small, roughly cubed
  • Sugar – 3-4 tbsp, or less (really depends on how sweet the fruit is)
  • Water – 1/4 cup
  • Lemon juice – 1 tbsp
  • Cardamom pods – 2, optional
  • Honey – 2 tbsp

How to:

  • Take water in a small saucepan. Add the sugar and lemon juice and heat it slowly, till it reduces and forms a light syrup. I added a couple of cardamom pods for flavor. Strain and cool the syrup.
  • Meanwhile, puree the cantaloupe cubes in a blender. Add the sugar syrup and honey, and mix well.
  • Pour onto a flat glass dish. Cover and pop it in the freezer.
  • After about an hour, take it out and mix the granita lightly with a fork. Repeat once or twice.
  • Finally, let it freeze for at least 4 hours before serving.

To serve:

  • Lightly ‘rake’ or scrape the frozen granita with a fork and serve in pretty wine glasses. Garnish with a couple of mint leaves and consume immediately.
  • Serve to unsuspecting 3 year-olds by telling them they are snow cones!
  • Eat a mint leaf with your first bite. The rest of the granita will taste amazingly fresher!

Cantaloupe Honey Granita

The syrup I made turned out to be too light and so I added a little honey. It gave a unique flavor to the granita. Feel free to make a sweeter syrup and leave out the honey. Or add it for a fun and healthy twist!

That is the thing with granitas. So simple and easy to  customize. All you need is fruit and a little sweetening agent.

The cantaloupe granita was wonderfully light and refreshing. Perfect for summer! I cannot wait to try this with water melon.

Here is an equally simple summer cooler – Strawberry Yogurt Jelly Bites.
