Easy Oven Grilled Chicken With Homemade Marinade

Simple Oven Grilled Chicken

Usually, I make simple Indian style fried chicken with ginger, garlic, red chili powder and garam masala. But this time, I decided to change it up a bit. I was inspired by all the summer time barbecue and grilling recipes. So I came up with this simple marinade to grill some chicken.

We do not have an outdoor grill, so I used our oven. Yes, I was mad enough to heat up the house with all the oven grilling. But it was so worth it, since it came out awesome! Let me show you how.

You will need:

For 3 large chicken thighs (skinless, bone-in)

  • Shallots – 3, small
  • Ginger and garlic paste – 2 tsp or, A small piece of fresh ginger and 3 pods of garlic
  • Red chili flakes – 1/2 tbsp or Red chili powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Soy sauce – 1 tbsp
  • Spicy barbecue sauce of choice – 2 tbsp
  • Mint leaves – 4-5
  • Cilantro – a couple of stalks
  • Oil – 3 tbsp + extra to brush while grilling
  • Salt – just a bit, as the soy sauce and BBQ sauce have salt added in them.

How to:

  • Blend all the marinade ingredients together in a blender.
  • Marinate the chicken thighs liberally and refrigerate for at least 2 hours.

Marinated Chicken Thighs

  • Pre-heat the oven to 400 deg.F and arrange the chicken pieces as shown. (Arrange them on a foil-lined baking pan if you do not have a grill tray.)
  • Reduce the oven temperature to 375 deg.F and grill till chicken is done. While grilling, turn the chicken over halfway, and baste with oil. The time needed per side depends on the thickness of the chicken pieces and whether it is boneless or bone-in. We like well-done meat, so I grilled them for 25-30 minutes per side.
  • Or, cook on an outdoor grill.
  • Enjoy with rice or naan along with a green salad, lime wedges and thinly sliced onions on the side.

Grilled Chicken With Homemade Marinade

This would make a good marinade for any other kind of meat too.
