Easy Dessert: Apple & Paneer Kheer (Indian Milk Pudding)

Apple & Paneer Kheer (Milk Pudding)

Here is a very different kheer recipe that is sure to please both adults and kids. Kheer (or payasam, as it is known in the south) is an Indian pudding-like dairy dessert. Traditionally broken vermicelli, rice or other grains are added to reduced and sweetened milk to make this rich dessert. But kheer is one of those desserts that lets you be infinitely innovative.

Apple & Paneer Kheer (Indian Milk Pudding)

I was actually looking for Indian apple desserts. Though traditionally not used in desserts that much like the more commonly used mangoes or bananas, I did come across a few innovative recipes in some blogs. Apple halva, apple kheer and even apple jalebi is possible, it seems. Kheer seemed the most easy one of the lot. I decided to add paneer too, to make it richer and give the kheer a slightly chewy texture.

Sweet Gala Apples For Kheer

The recipe is very straight-forward. You boil and reduce the milk, sweeten it and cook the paneer in this milk. Meanwhile, grated sweet apples are cooked separately and cooled. This is then mixed with the slightly cooled kheer mixture and you get delicious apple-paneer kheer.

Apple & Paneer Kheer or Payasam

You will need:

  • Apples – 2, medium-sized (sweet red or golden apples are best)
  • Ghee – 1 tsp
  • Cashew nuts and raisins – around 10, each (I normally don’t add raisins to kheer as we don’t like it that much)
  • Whole milk – 4 cups
  • Cardamom powder – a large pinch
  • Sugar – 4-5 tbsp (as per sweetness desired)
  • Condensed milk – 1 tbsp
  • Paneer – 1 cup, grated or crumbled

How to:

  • Peel, core and grate the apples. In a small saucepan, add the apples and 1 tbsp sugar and gently cook them on medium flame till apples are softened. Do not let them turn mushy. Remove from heat and cool.
  • In a large, thick-bottomed pan, heat the ghee and fry the nuts and raisins. Remove and keep aside.
  • In the same pan, add the milk and bring to a gentle boil. Add the cardamom powder, reduce the heat and allow the milk to reduce to 3/4th the quantity. Keep stirring every now and then, scraping down the cream that gathers at the sides of the pot.
  • Add the rest of the sugar and condensed milk and stir to dissolve the sugar. Now add the paneer and cook for 4-5 minutes.
  • Remove from heat and allow this to cool slightly before mixing in the cooked apples. (I did this because I feared the hot milk would be curdled if I added the apples to it directly.)
  • Garnish with the nuts and serve slightly warm or completely chilled.

Apple & Paneer Kheer

Enjoy a bowl of delicious apple and paneer kheer in the evening, after dinner or even for breakfast the next day.

I am so into custards and puddings and milky creamy things right now, and I’ve never seen the Kheer made with apple, always mango. Apples are easier to peel so I’m happy about this recipe!
