Pineapple & Ginger Agua Fresca

Agua Fresca, which literally means fresh water, is a Mexican/Central American cool drink. It is made by pureeing fruit (any ripe, seasonal one can be used), straining it and mixing with cold water. I know I’ve said earlier that I love milkshakes. But can you imagine, the possibilities there are to something as simple and light as an agua fresca?

Fresh Pineapple Agua Fresca With Mint Leaves

Food festivals in our Texan city can only mean one thing – tacos, fajitas, gorditas, and more tacos. Lined up in front of every stall you would find these huge glass canisters shaped like Winnie the Pooh’s honey pot. A hot, spicy fajita needs a light, refreshing agua fresca to wash it down. Watermelon seems to be the all-round favorite, but you can use any fruit you wish. You can also add fresh herbs, lemon juice and ginger.

I decided to use pineapple. I have my reasons. One, it is currently in season. Two, we are really not big fans of this spiny fruit, which means we rarely buy it, and so Boy doesn’t get much of a chance to experience it. I was about to change all that!

Ripe Pineapple

An agua fresca preparation differs slightly from a typical fruit juice. It is much watered down, which makes it light yet refreshing. Not too sweet and goes perfectly with anything. Just the thing you need after a hot day in the sun!

Fresh Pineapple Agua Fresca

You will need:

  • Pineapple – 1 ripe and large, cut into chunks
  • Ginger – a 2 inch piece, cut into big pieces (or more, if you wish)
  • Sugar – 1/2 cup
  • Water – 3 cups
  • Ice – crushed or cubes, to serve

How to:

  • Puree the pineapple pieces, ginger and sugar by adding the water a little at a time. You may need to do this in batches.
  • Strain the juice into a clean pitcher and refrigerate.
  • Stir well and serve in glasses filled with ice and enjoy the cool freshness!

Fresh Pineapple Agua Fresca Over Crushed Ice

Notes:

  • You can make aguas frescas with water melon, cantaloupe, strawberries, cucumber, papaya, mangoes and more.
  • Experiment with herbs like mint, thyme or sage and come up with your own fun combination.
