Watermelon Milkshake Granita

Yep, another frozen treat post. This just might be the last one of the season, I promise! I wanted to make watermelon popsicles, then decided upon granita at the very last minute. I have a cantaloupe and honey granita recipe on the blog. Do check it out. When I made that, I prepared a light sweet syrup and blended the fruit with it. This time around, I blended watermelon chunks with a little milk and sugar.

Easy Watermelon Granita Dessert

Traditionally, granita is dairy-free, made by freezing a simple fruit and syrup mixture. But I saw no reason why it wouldn’t work with a light watermelon milkshake. Yes, a watermelon milkshake. If you’ve never made it, you must. It is absolutely delicious and the color is a lovely shade of pink.

Watermelon Milkshake Granita

Watermelon is best enjoyed as a huge slice, taking big crunchy bites with juice dripping all over your chin and hands. It needs nothing else. But the best watermelon I ever tasted was at this lovely lady’s house where I was a paying guest for a while. She came up with these amazing spur-of-the moment recipes like cheesy toasted open sandwiches, broken egg curries (where the eggs are not boiled, instead cracked open into the curry and the heat sort of poaches them, it really is delicious) and tiny chunks of juicy watermelon soaked in sweetened milk. That was the first time I realized that watermelon goes well with milk.

Watermelon Granita - The Easiest Frozen Dessert Ever

Whenever I remember that, I whip up a quick watermelon milkshake for Boy. It would be lovely frozen into popsicles too. For a fun twist, try making this granita. A granita is really simple. The blended mixture is kept in a flat dish in the freezer. Leave it to freeze overnight or at least 6 hours. Just when you are ready to serve, use a large fork to scrape the frozen granita. You will end up with grainy crystals, scoop them into a glass or bowl and serve. That’s all there is to granita!

Watermelon Granita - The Easiest Frozen Dessert for Summer

WATERMELON MILKSHAKE GRANITA

You will need: (Makes 4 cups)

  • Watermelon puree – 3 cups, made from a little over 3 cups of chopped watermelon (make sure it is seedless)
  • Milk – 1 cup
  • Sugar – as and if needed, depending on the sweetness of the fruit

How to:

  • Blend watermelon and milk together. Taste and add some sugar or more milk if required.
  • Pour into a flat freezer-safe dish, cover and freeze. Allow to freeze overnight or at least 6 hours.
  • When ready to serve, rake through the frozen mixture using a large fork. Collect the grainy crystals in a glass or bowl and serve immediately.

Watermelon Granita

Notes:

  • If you don’t want to do a milkshake version, simply blend watermelon with a little sugar, lemon juice and mint leaves and proceed as above.
  • Use any kind of juicy fruit to make granita.
