Frozen Greek Yogurt Bark

I am so happy that at least for now, Texas is out of the deep freeze that’s been gripping the nation the past month. I realize not many are as lucky as us, but I have a super simple recipe to cheer you up. And it’s a frozen treat. Don’t hate me, please. It’s absolutely delightful, I promise.

Is it just us, or does your family too crave ice cream in the winter? I know, it’s counter-intuitive in the cold weather, but ice cream sure is one of the most comforting foods ever. Don’t you agree? Right now, if you have an unusual hankering for frozen treats, try frozen yogurt, which is a great healthy alternative to regular ice cream. Of course, you can buy a tub at the store, but where’s the charm in that?

Frozen Chobani Greek Yogurt Fruit And Nut Bark

By adding just a few favorite ingredients to yogurt, you can make delicious frozen yogurt barks. It is so much better if you used Greek yogurt, because they are naturally so thick and creamy and delicious. I made this recipe to take part in the #MadeWithChobani initiative going around in social media circles. Frozen Yogurt Bark

The frozen yogurt barks are so simple to make. I had a juicy pomegranate on hand, so I knew right away, it would be pretty and delicious sprinkled over the yogurt bark. To make it more interesting, I also mixed in a handful of dried cranberries and slivered almonds in the yogurt.

Ruby Red Pomegranates

This mixture is spread on a pan lined with foil or wax paper. Top it with some gorgeous ruby-red pomegranate arils and add a few chocolate chips. Poms and chocolate make an amazing combination, did you know?

Frozen Yogurt Fruit And Nut Bark

Once frozen, break the frozen slab in to pieces (barks) with a sharp knife, and store in a resealable freezer bag or container. Alternately, you can freeze the mixture in ice-cube trays or little molds in fun shapes. It makes a great treat for young and old alike.

Frozen Greek Yogurt Fruit And Nut Bark

FROZEN GREEK YOGURT BARK

You will need:

  • Greek yogurt – 2 cups (I used plain flavor)
  • Sugar or honey – 2 tbsp
  • Dried cranberries – 1/4 cup
  • Slivered almonds – 1/4 cup
  • Fresh pomegranate arils – 1/2 cup
  • Semi sweet chocolate chips – 1/4 cup

How to:

  • Combine Greek yogurt, sugar, dried cranberries and almonds in a mixing bowl.
  • Line an 8×8 baking pan or some other freezer safe pan with wax paper or foil. Spread the Greek yogurt mixture on the prepared pan and smooth the top. Scatter pomegranate arils and chocolate chips on the top. Freeze for a couple of hours or even overnight.
  • Once frozen, remove yogurt bark from the pan and cut into barks with a sharp knife. Store in resealable freezer bags or containers.

Notes:

  • Play around with your favorite fruit and nut combo to come up with different kinds of yogurt barks.
  • You can use flavored Greek yogurt too and in that case, skip the sugar/honey.
  • You can have this treat without freezing it as well, kind of like a fruit and nut yogurt parfait.

We absolutely loved this healthy frozen yogurt treat. I will be making this often and playing around with different flavors and toppings as well.

    If I want to travel with the bark, will it melt back into yogurt? Does it need to stay frozen?

      It will surely melt after a while. You can simply mix in fruits and nuts to lightly whipped Greek yogurt.

      I know what you mean. I had to pick out all the cranberries for my kid! Just use fruits and nuts they really like and you could also try flavored yogurt if that is something they like.
