Summery Watermelon Berry Popsicles

Today’s recipe is going to be an easy and really quick one. You just need to be patient for a few hours till the popsicles set in the freezer, that’s all. Now, who doesn’t love popsicles, right? I think it is the treat-on-a-stick allure that brings out childhood memories and makes it an all-round favorite.

Summer Fresh Watermelon Berry Popsicles

As summer rolls around, I start looking for special popsicle flavor combinations to cool us down. And what screams summer than a fat, juicy, round watermelon? I decided to add a handful of assorted berries too. A bit of lime juice to bring out the sweetness of the fruits and some yogurt to add a touch of creaminess is all you need.

As I whipped up this concoction, I knew it was going to be good. We actually made a big batch and enjoyed some as a cool smoothie and froze the rest to make popsicles. It’s absolutely delicious!

Homemade Watermelon, Berry And Yogurt Popsicles

You can try this with just watermelon and some yogurt, but I also roughly blitzed some berries to add color, sweetness and texture. I love biting into the frozen berry bits. You can add more yogurt to make a really creamy version. I made mine on the thinner side so that the watermelon flavor would shine.

Homemade Watermelon Berry Yogurt Popsicles

If you are a watermelon lover like us, you must definitely try this summery treat.

Watermelon Berry Yogurt Popsicles

WATERMELON-BERRY POPSICLES

You will need: (Makes 12 small popsicles or 6-8 regular sized ones)

  • Watermelon chunks – 2 cups
  • Lime juice – from half a lime
  • Yogurt – 1/2 – 1 cup (add more for a creamier texture)
  • Sugar – 2 tbsp (if needed)
  • Blackberries – a small handful
  • Blueberries – a small handful

How to:

  • Blend the watermelon in a blender. Strain to remove pulp and return juice to the blender.
  • Add lime juice and yogurt and blitz together. Taste and add sugar if needed.
  • Add the berries and pulse a couple of times just enough to break down the berries.
  • Pour into popsicle molds, place the top cover and stick and freeze till solid, maybe 3-4 hours. If you do not have popsicle molds, you can use tiny cups as well. Freeze them partially for an hour, then stick a wooden pop stick in the middle and return to freezer. Place popsicles on the counter for a couple of minutes to make it easier to remove them from the molds.

Notes:

  • You can use Greek yogurt for a thicker, creamier texture, I simply used regular yogurt.
  • You can use other berries like raspberries and sliced strawberries as well.

    I’m always looking for ways to reduce the bulk of the watermelon which doesn’t fit in the fridge but doesn’t do well on the counter either. This is a great solution.

    Your popsicles look so wonderful and your photos are so great! Love the lighting…and the popsicles of course. I must try to find a popsicle set as they are perfect for summer. (Even if our summer has been quite cool and we have had hardly a warm day.)
