Strawberries & Cream Chocolate Crepes

Delicate dark chocolate crepes filled with sweet strawberries and whipped cream make for a Valentine’s Day worthy breakfast in bed or romantic dessert!

So, how’s the New Year treating you thus far? I hope it’s good.We’re almost done with the first month already, can you believe that? I couldn’t let the first month go by without a single chocolate recipe. I was planning on cake, which didn’t happen, but I’ve got something even better for you!

I hope you like crepes. That’s what I make when I’m feeling all fancy. Did you know that in some countries these are actually called pancakes? That’s what my grandma and mom called them. Pancakes at our home were unleavened, paper-thin, and filled with something sweet. Just to avoid confusion, let’s stick to calling them crepes.

I love crepes. They are so basic, yet there is so much one can do with them. Crepes begin with a simple eggy batter. For an easy crepe recipe, I just blitz it in the blender and chill the batter for a couple of hours before making the crepes. Now, pancakes can easily be made eggless, but I wouldn’t advise the same about crepes. The eggs are vital for its flavor and texture.

Speaking of texture, I love crepes with slightly crisp, lacy edges. I’ve taken to using my cast iron griddle to make them instead of my nonstick skillet.

Chocolate crepes are simply crepes with some cocoa powder added to the batter. They’re chocolatey and well… amazing!

And there’s so much you can do with chocolate crepes. I spread some with Nutella for a quick snack for the little one. You can also use any sort of nut butters. Or just a light dusting of powdered sugar will do.

But, you know what’s coming up in February right? Yep, the day to profess our love to one and all! In the spirit of Valentine’s Day, we shall fill these dark chocolate crepes with sweet strawberries and whipped cream. Strawberries and cream on Valentine’s Day – is there anything better?!!

These strawberry cream crepes are simply out of this world amazing. The filling is kept simple and light, letting the chocolate flavor really shine.

These crepes make a great Valentine’s Day breakfast or Valentine’s Day dessert recipe. If you need to make them for breakfast, you can make the batter the previous night. If you are making them for dessert at night, the crepes can be made ahead and assembled with the filling right before you are ready to eat. The good thing about crepes are that you really do not need any fancy equipment at all.

Delicate dark chocolate crepes filled with sweet strawberries and whipped cream make for a Valentine's Day worthy breakfast in bed or romantic dessert!

Serves: 18-20 crepes
You will need:
For the chocolate crepes,
  • Milk - 2 cups
  • Eggs - 2
  • Oil or melted butter - 3 tbsp
  • Vanilla extract - 1 tsp
  • All purpose flour - 1½ cups
  • Unsweetened cocoa powder - ⅓ cup
  • Sugar - 2 tbsp
  • Salt - a pinch
  • Heavy cream - 1 cup
  • Powdered sugar - 3 tbsp
  • Strawberries - 1 lb, sliced
How to:
  1. Blend the milk, eggs, oil/butter and vanilla extract till just combined. Add the flour, cocoa powder, sugar and salt and blend for a few seconds till smooth. Refrigerate batter for 1-2 hours or overnight.
  2. When you are ready to make the crepes, heat a large griddle or skillet or crepe pan on medium heat. Lightly rub melted butter on the pan with a wad of tissue paper.
  3. Pour ¼ cup worth batter in the center of the pan and swirl the pan so that the batter evenly covers the bottom. Cook the crepe till you see bubbles appearing on the surface. Flip the crepe as soon as you see the edges turning a light golden brown. Cook the other side for just a few seconds and remove onto a plate.
  4. Repeat till all the batter is used up, stacking the crepes on the plate.
  5. To make the filling, take the heavy cream and powdered sugar in a cold bowl. Using a mixer or whisk, beat the cream till soft peaks peaks form.
  6. Spread a couple of tablespoons worth whipped cream in one half of a crepe. Dot with sliced berries. Roll or fold and dust lightly with powdered sugar.
  7. Repeat with all crepes. Serve at room temperature or cold.
Notes:
1. You can also serve chocolate crepes with Nutella, peanut butter or other nut butters, syrups, etc.
