Baked Chicken, Bean & Jalapeño Popper Taquitos

It’s fiesta time down here in San Antonio. It is a two-week long party held in April every year, just before Cinco de Mayo, so it’s double the parties, fun and food for us! And just my luck, I got asked by the nice folks at Farm Rich to sample some of their delicious party-worthy snacks.

I was super excited to try the Farm Rich Jalapeño Peppers, delicious breaded Jalapeño Peppers stuffed with 100% real cream cheese. Simply pop them into a super hot oven or toaster oven or fry them up in a pan for a quick snack or party appetizer.

You know how much I love snacks, don’t you? But whenever I plan any event, I always end up over thinking the main course and desserts, and as a result, I am left scrambling for last-minute appetizer ideas. Sounds familiar? Then these snack packs are just what you need.

I also love that they have 0g trans fat per serving. As moms, we strive to feed our families made-from-scratch foods, but sometimes life gets in the way. It’s nice to know that you have guilt-free alternatives like these, right? Farm Rich snacks (and also breakfast foods) are made with wholesome ingredients, quick-frozen and carefully packaged so busy families can prepare great-tasting food within minutes. The Jalapeño Peppers have a mild kick to them, the breading is crisp and the filling is super delicious. You can set out a big platter of these peppers and get right in the party mood!

I made a quick sour cream dip with avocados to go with the spicy peppers. Mash up an avocado and whisk well with sour cream and lime juice to make this delicious avocado crema dip. Set out little finger-food skewers for the guests to pick and dip the peppers.

Since I bought a lot of these Jalapeño Peppers, I was also looking for other ways to incorporate them in recipes. And what better than taquitos for a Cinco de Mayo themed party?

All the better if you can keep the taquito filling interesting and unique. No guesses as to what I used to fill my tortillas! I also kept the taquitos on the lighter side by baking them. That way, there’s no guilt when you reach for seconds, thirds or more!

I spread some black bean paste on the tortillas (you can use refried beans or mashed beans), shredded cooked chicken and a couple of the Farm Rich Jalapeño Peppers. Roll them up, brush lightly with oil and bake till golden at the edges. Serve baked taquitos with the cool avocado crema for a super fun party meal. (Psst… I also served them as a yummy after-school snack one day!).

These chicken jalapeño taquitos are super easy to make and the cream cheese inside the jalapeños are a nice surprise when you bite into them. If you like cream cheese filled crispy jalapeño poppers and chicken taquitos, wait till you try these chicken and jalapeño popper taquitos. Mind blown yet?!!

Make these delicious baked taquitos filled with chicken, black beans and cream cheese stuffed jalapeño peppers for a mild kick. Serve these at your Cinco de Mayo party with a tangy and creamy avocado crema dip.

You will need:
For the baked taquitos,
  • Flour tortillas - 6
  • Black bean paste - 6 tbsp (see Notes)
  • Chicken - 1 cup, cooked and shredded
  • Farm Rich Jalapeño Peppers - 12, frozen
  • Oil - to brush on top
For the avocado crema dip,
  • Avocado - 1, ripe
  • Sour cream - 1 cup
  • Lime juice - 2 tbsp
  • Salt - to taste
How to:
  1. Chicken, Bean & Jalapeño Popper Taquitos: Pre-heat oven to 450 deg.F. Line a baking sheet with parchment paper. Set aside.
  2. Lightly toast the tortillas on a hot skillet so that they are easy to roll up. Alternately, you can microwave them for 30 seconds.
  3. Spread 1 tbsp black beans on a tortilla. Place some chicken at the edge. Top with two Farm Rich cream cheese filled Jalapeño Peppers.
  4. Beginning from the filled end, roll up the tortilla and seal the edge with a dab of black bean paste or water. Place the rolled-up taquito seam side down on the baking sheet. Repeat till all tortillas are used up.
  5. Brush lightly with oil. Bake for 10-12 minutes or till taquitos are golden at the edges and there are a few golden spots on the tops as well.
  6. Remove from oven and serve with avocado crema. Recipe follows.
  7. Avocado Crema: Peel, pit and mash the avocado flesh till smooth. In a bowl, combine mashed avocado with sour cream, lime juice and salt till smooth.
Notes:
1. Use refried beans or cook and mash some beans for the bean paste.

Serve these delicious baked chicken taquitos with more of the breaded Jalapeño Peppers snacks and the creamy avocado dip at your upcoming Cinco de Mayo party and see them all disappear in no time at all!

Another variation that I love is to bake the jalapeño popper snacks first, then fill up some tortillas, and serve as chicken and jalapeño taco wraps topped with some pico de gallo and sour cream. Yum!
