Are you looking to include more seafood in your diet? Do you like to make juicy burgers at home? Then today’s recipe post is for you. These spicy tuna burgers are easy to make and full of flavor.

The star of this burger is the spicy tuna fish patties made with Wild selections Solid White Albacore Tuna. I recently came across this brand and was impressed with their message of seafood sustainability. Wild Selections sources their seafood only from ocean areas that have been certified sustainable to the Marine Stewardship Council (MSC) Standard – the world’s leading certification program for wild-caught, sustainable seafood for the past 20 years. This assessment and certification of oceans areas by MSC ensures that fish stocks are healthy, well-managed and plentiful, something that we must ensure for our future generations. I used the Wild selections Solid White Albacore Tuna in Water (they also have it packed in Olive Oil). I sautéed some aromatics (onions, scallions, ginger and garlic) in a fiery Thai red curry paste. Mix it in with the crumbled tuna fish, add fresh cilantro, an egg, and some breadcrumbs until you can form thick patties.

I used my trusty cast iron skillet to sear them but you can bake them in the oven or throw them on the grill as well. I also decided to lace creamy mayonnaise with spicy sriracha sauce to take these Thai burgers to another level. I swear it made all the difference!

I could have simply eaten the spiced tuna patties on their own, but I was going for a loaded burger. And a good burger needs toppings – like this fresh, peppery slaw made with cabbage and carrots. It’s light, tangy and adds the perfect crunch to the burger. You also need fresh tomatoes and cucumber slices. Feel free to add pickles if you cannot imagine a burger without pickles; there are so many possibilities, so just roll with it.

I like to lay out  a burger station and get my family to build their own burgers. It’s so much fun and makes for a fun spring/summer night dinner. If you are watching your carb intake, simply sandwich the fish patties between crunchy lettuce leaves.

Build the best Thai fish burger with the spicy tuna patties, butter-toasted burger buns, juicy tomatoes and cucumber slices, peppery slaw and creamy sriracha mayonnaise. Every bite packs such a flavor punch, you may not even be able to stop at one! Add some potato chips or fries for a takeout-style meal made right at home.

You will need:
For tuna patties,
  • Oil - ¼ cup, divided
  • Red onion - ¼ cup, finely chopped
  • Green onions - 3 stalks, finely chopped
  • Ginger - 2 tsp, grated
  • Garlic - 2 cloves, finely minced
  • Thai red curry paste/sauce - 2-3 tbsp (as per heat desired)
  • Soy sauce - 1 tsp
  • Wild Selections Solid White Albacore Tuna in Water - 2 cans, drained
  • Cilantro leaves - 2 tbsp, finely chopped
  • Egg - 1, large
  • Breadcrumbs - ¼ - ⅓ cup + plus extra for coating
For peppery slaw,
  • Cabbage - 2 cups, shredded
  • Carrot - 2 small, shredded
  • Cilantro leaves - 1 tbsp, finely chopped
  • Rice vinegar - 2 tsp
  • Sugar - 2 tsp
  • Salt - ½ tsp
  • Cracked black pepper - 1 tsp
For sriracha mayonnaise,
  • Mayonnaise - ½ cup
  • Sriracha sauce - 1 tbsp
For tuna burgers,
  • Burger buns - 4, sliced in half
  • Butter - 2 tbsp
  • Tuna patties - 4 (see above)
  • Fresh slaw - see above
  • Tomato - 1 large, sliced
  • Cucumber - half of a small one, sliced
  • Sriracha mayonnaise - see above
How to:
  1. Tuna patties: Heat 2 tbsp oil in a skillet or pan. Add onions, ginger and garlic and saute for a few minutes until onions are soft.
  2. Add the Thai curry paste/sauce and saute for few minutes until sauce is thick and reduced. Stir in soy sauce and cilantro leaves. Set aside to cool.
  3. In a mixing bowl, add the drained tuna, prepared spice mixture and an egg. Mix well taking care not to mash the tuna fish too much. Mix in the breadcrumbs, a little at a time, until you can form firm patties with the mixture. Yo will need anywhere between ¼ - ⅓ cup of breadcrumbs, so start with ¼ cup at first.
  4. Divide the mixture into 4 and form each portion into a thick patty. Lightly coat both sides with breadcrumbs and set aside.
  5. Heat 2 tbsp oil in a cast iron skillet. Place the patties in the pan and fry both sides until golden brown, 1-2 minutes per side. Drain and remove to a plate.
  6. Peppery slaw: Mix all the ingredients in a medium mixing bowl. Taste and adjust seasoning. Set aside for 5-10 minutes to develop the flavors.
  7. Sriracha mayonnaise: In a small bowl, mix the mayonnaise and sriracha sauce until smooth. Set aside.
  8. Tuna burgers: Spread some butter on each half of the burger buns. Toast the buns lightly on a hot skillet.
  9. Build a burger with a tuna patty, a couple of slices of tomato and cucumber, some slaw and a generous slathering of the sriracha mayonnaise. Serve immediately with chips or fries.
