Peanut Butter Stuffed Banana Ebelskivers With Strawberry Sauce

June 8, 2016 by Anjana @ At The Corner Of Happy And Harried 25 Comments

Ebelskivers or Æbleskivers are little pancake puffs cooked in a special ebelskiver pan. This version is made with whole wheat flour and bananas and stuffed with peanut butter for a creamy center. Served with strawberry sauce, this makes for a delightful breakfast or quick snack.

Today I have a delicious, super cute recipe. You might have heard about ebelskivers. These are little pancake puffs cooked in a special ebelskiver pan, which is a thick pan with multiple ball-shaped indentations for holding the batter. Ebelskivers are originally Danish in origin, but there are multiple variations throughout the globe, like the Japanese takoyaki or South Indian paniyaram.

I use my paniyaram (or ebelskiver) pan to make savory paniyarams using a dosa or adai batter. Sometimes I also make sweet pancake puffs for the little one. This is such an easy recipe and if you have the pan, you can easily make them in no time. Look for ebelskiver pans in your local store or online. In India, you can use the traditional appe or paniyaram pan.

When I was little, mom made me little fried dough balls mixed with mashed bananas as a quick snack fix. This pazham paniyaram recipe forms the base for today’s banana ebelskivers recipe. I also stuffed them with a little blob of peanut butter, because we all know that bananas and peanut butter are best buddies.

With a generous dusting of powdered sugar, these little pancake balls are absolutely irresistible. Usually, ebelskivers are not too sweet and are served with some sort of fruit jam. I love to serve them with fresh berry sauce in the summer.

Here, let me show you a shot of the creamy gooey peanut butter center. Pillowy ebelskivers filled with a creamy surprise, doesn’t get better than that.

Dunk that goodness in some bright strawberry sauce. One word – yum!!

The best thing about ebelsivers are that they are cute (obviously), appeals to kids because of their tiny size and you do not need much oil to make them nicely browned all over. They are kind of like doughnut holes without all of that fat. Any pancake batter recipe would work for making ebelskivers. I made mine using whole wheat flour and a bit of rice flour as is done while making South Indian sweet paniyarams.

Author: Anjana Devsahayam
Recipe type: Breakfast,Brunch,Snack
Cuisine: Danish,American
Serves: 24 ebelskivers
You will need:
For Peanut Butter Stuffed Banana Ebelskivers,
  • Whole wheat flour - ¾ cup
  • Rice flour - ¼ cup
  • Baking soda - ½ tsp
  • Baking powder - ½ tsp
  • Salt - ½ tsp
  • Buttermilk - 1 cup (I use half yogurt and half milk)
  • Egg - 1, large
  • Vanilla extract - ½ tsp
  • Bananas - 2 large, mashed (very ripe)
  • Creamy peanut butter - 3-4 tbsp
  • Butter - 1-2 tbsp, melted (for brushing the pan)
  • Powdered sugar - for dusting
For Strawberry Sauce,
  • Strawberries - 1 cup, hulled and chopped
  • Sugar - ¼ cup
  • Lemon juice - 2 tsp
  • Salt - a small pinch
How to:
  1. Peanut Butter Stuffed Banana Ebelskivers: Whisk the dry ingredients together in a mixing bowl.
  2. In another bowl, whisk together the buttermilk, egg, banana and vanilla extract.
  3. Tip the wet ingredients into the dry ingredients and whisk well to combine. Do not overmix, a few lumps are okay.
  4. Heat the ebelskiver pan on medium heat. Dab a bit of butter in the indentations of the pan. Pour batter into each indentations till the halfway mark. Place a dot of peanut butter in the center, around ½ tsp. Cover with more batter.
  5. Cook till bottom is golden brown, around 3-4 minutes. Flip them over with a skewer or small spoon and cook the other side for a couple more minutes. Reduce heat slightly if the ebelskivers are browning too rapidly.
  6. Remove ebelskivers from pan to a platter and keep warm. Dust with powdered sugar and serve with fresh strawberry sauce. Recipe follows.
  7. Strawberry Sauce: Add all ingredients to a saucepan and cook on medium heat till berries are soft. Mash them with the back of a spoon and cook till the sauce comes together. Remove to a jar and set aside till needed.
Notes:
1. If you do not have rice flour, replace it with whole wheat flour or all-purpose flour.
2. Make sure to cook the ebelskivers on medium or medium-low heat so that the outsides do not brown too rapidly without the insides cooking properly.
3. Since the ebelskivers come with multiple indentations (anywhere between 7-12), the cooking process goes by pretty quickly and smoothly.

Serve warm ebelskivers with strawberry sauce for a delightful breakfast/brunch or quick after school snack.

Namaskaram Anjana – most delcious recipe and brilliant photographs, which I really enjoy looking at and you even tempt me a lot, althou I can live without sweet things for most part of the year 🙂 🙂 – But, please can you send me a couple of punnets of those wonderful strawberries. Very occasionally I find some here in Cochin – all the way down from Ooty. Thank you.
